Chicken Pot Pie Soup

Ready for your new favorite comfort food? This easy recipe showcases creamy and tasty chicken while also serving as a dairy-free option depending on the milk you choose to add.

Ingredients:

2 tablespoons olive oil

1-pound boneless, skinless chicken breasts, about 2 larger breasts

1 cup celery, diced

1 cup carrot cut in 1/4-inch thick small circles

1 cup onion finely chopped

1/2 tablespoon garlic finely minced

2 cups Yukon Gold potatoes peeled and cut into 1-inch pieces

1 cup Yukon Gold potatoes peeled and cut into quarters so that you can remove them at the end

1/4 teaspoon pepper

1/4 teaspoon salt

1/4 teaspoon dried parsley

3 cups chicken broth or bone broth — low sodium!

1/4 teaspoon dried basil

1/4 teaspoon dried rosemary

1 tablespoon fresh parsley for garnish

1/2 cup milk of choice

It wouldn’t be winter without a hot serving of chicken noodle soup. A staple in getting over a cold or the flu, now this recipe will help you fight the winter chills while being an easy to make recipe.

1 cup celery chopped finely

1 cup onion chopped finely

1 1/2 cups carrots sliced in small circles

1/2 tablespoon garlic minced

1.5 pounds boneless skinless chicken breasts

1/2 teaspoon salt

1/2 teaspoon pepper

1 teaspoon fresh rosemary chopped

1/4 teaspoon dried thyme

1/4 teaspoon red pepper flakes optional

4 bay leaves

8 cups chicken broth low or no sodium

3.5 cups egg noodles (8 oz.)

Quinoa Black Bean Crockpot Stuffed Peppers

1 cup uncooked quinoa, rinsed
