Soup For the Soul Recipes

With the winter chill in full force, a bowl of soup is a great way to stay warm while we try to beat the winter blues. To help alleviate the struggle of deciding what to prepare and cook, we have three delicious soup recipes for you to try. Best of all, they’re healthy by being low in sodium which helps prevent swelling in the legs! 

Classic Chicken Noodle Soup

It’s tough to imagine a list of soups without chicken noodle being included. That’s why it’s at the top of ours! This recipe is simple to make and can be done in your slow cooker.

Ingredients:

1 teaspoon extra-virgin olive oil

1 cup diced onion

2 celery stalks, diced

2 carrots, diced

2 cloves garlic, minced

2 teaspoons fresh thyme

1-pound boneless skinless chicken breast, cut into half-inch pieces

Kosher salt, to taste

Freshly ground black pepper

32 ounces low-sodium chicken stock

1 pound egg noodles

1/4 cup freshly chopped parsley

Healthified Broccoli Cheddar Soup

Want a soup recipe that’s packed with veggies, filled with flavor and creamy? Try this broccoli cheddar soup recipe!

Ingredients:

1 bunch broccoli

1 small onion, finely chopped

1 medium red-skinned potato, diced

1/4 cup all-purpose flour

3 cups low-sodium chicken or vegetable broth

Kosher salt and freshly ground black pepper, to taste

1/4 teaspoon freshly grated nutmeg

1 cup grated extra-sharp Cheddar

1 teaspoon Worcestershire sauce

One 12-ounce can fat-free evaporated milk

2 scallions, thinly sliced

Slow Cooker Chicken Tortilla Soup

You may be surprised to find this out, but this delicious recipe requires no pre-cooking, sauteing or browning before entering your slow cooker. And best yet, this recipe is enough for 12 servings. If you’re hosting a party or want leftovers for a few days, you won’t be disappointed!

Ingredients:

3 chicken breasts

2 teaspoons chili powder

1 teaspoon cumin

Salt and pepper, to taste

1 medium onion, chopped

1 red bell pepper, seeded and chopped

1 yellow bell pepper, seeded and chopped

1 28-ounce can of whole or diced tomatoes with juice

1 can Rotel

3 cups low sodium chicken broth (more if you like the soup with more broth)

4 ounces of tomato paste

1 chipotle pepper in Adobo (may add more, if you'd like)

1 can of black beans, drained and rinsed

1 lime, juiced

Add ons: sour cream, avocado, cilantro leaves and/or grated cheese
